A Symbol of Resilience

In Rwanda, coffee is more than just a crop; it symbolizes resilience, growth, and the remarkable transformation of a nation. Coffee cultivation began in the 1930s under Belgian colonial rule, where the local population was forced to grow coffee amid heavy taxation and strict export mandates. By the time Rwanda gained independence in the 1960s, coffee had become a symbol of oppression, and many Rwandans despised it.


However, following independence, Rwandans began to reclaim their coffee production, transforming its bitter past into a vibrant future filled with hope. Coffee has since become a significant boon for Rwanda and its economy, with farmers shifting their focus from commercial production to high-quality specialty coffee.


This shift has elevated not only the coffee itself but also the livelihoods and dignity of those who produce it. Rwandans now believe that working in coffee allows them to live a good life, fostering a sense of community among those striving for the same goal: to elevate their nation and grow a crop they can be proud of.


The Kilimbi Washing Station: A Hub of Innovation

The Kilimbi Washing Station is located in the Nyamasheke District of western Rwanda, nestled along the shores of Lake Kivu. This picturesque area is surrounded by volcanic hills, which create a rich environment for coffee cultivation. The red-soil laden hills of Kilimbi are known for producing some of the best coffees in the entire region.


Historically, Kilimbi has focused solely on washed-processed coffees. However, it has recently received legal permission from the government to experiment with alternative processing methods, including honey processing (also known as pulp natural) and anaerobic natural processing. This newfound freedom has allowed the mill to explore unique and exciting flavor profiles that are rare to find in this area.



A Unique Processing Method

This particular offering of Rwanda Kilimbi Washed coffee is among the best from these recent experiments. The coffee was processed using an innovative anaerobic fermentation style known as Anoxic Fermentation. The cherries are picked at their ripest point, and a Brix meter is used to measure the sugar content of the coffee cherries, ensuring they are harvested at their peak.


Once harvested, the ripe cherries are placed into clean, black plastic tanks, covered with a clean sheet, and then submerged in water for about 48 hours. This fermentation process builds acidity in the environment, breaking down the cherries surrounding the seeds.


After fermentation, the macerated cherries are laid on African raised beds to dry. This method slows down the drying process, allowing the seeds to season within the pulp of the cherry. As a result, the coffee develops a deeper fruit-like characteristic, with wild flavors ranging from berries and citrus to dried tropical fruits.


Supporting Local Farmers

We celebrate these innovations for more than just their flavor exploration; they also empower local farmers. When farmer groups can control the flavor of their product and create high-quality variations, they can command higher prices for their coffee. This rarity and exceptional quality provide the community with increased income.
