From Day One to Every Day: Beth's Years of Coffee and Connection



An OG from the Very Beginning

Beth Nottingham isn’t just part of Zeb’s—she’s been here since before the doors even opened. Back when the shop was just a construction zone with two chairs and a whole lot of imagination, Beth saw the potential and believed in what Zeb’s could become. Nearly six years later, her warmth and laughter remain at the heart of everything we do.


More Than a Barista—Our “Shop Mom”

Beth is more than just an incredible barista—she’s our “Shop Mom” and the last of the original team members. She grew up all over the world as an Air Force kid, living in places like Guam and the Philippines before settling in Texas. Eventually, love brought her to Kansas, where she and her husband, Dale, have built a life filled with family and adventure.


With four daughters, a bonus daughter and son, and 13 grandchildren, Beth’s world is full of love and excitement. She and Dale frequently travel to visit family and hope to one day move back to Texas to be closer to their “Grands.” But until then, we’re beyond grateful to have her bringing joy to our little coffeehouse.


A Warm Smile and the Best Drink Recommendations

Beth is best known for her kindness, big heart, and the way she makes everyone feel at home. Whether she’s greeting customers, sharing a laugh, or offering a listening ear, Beth’s presence makes Zeb’s feel extra special.


She also has some top-tier drink recommendations! Her all-time favorite? The Grinch (Peppermint Matcha) when it’s in season. But when that’s not available, she’s happy with an iced Snickerdoodle or a classic London Fog.


Beth’s Legacy at Zeb’s

Beth has poured her heart into this place—quite literally. From the early days of dreaming about what Zeb’s could be to creating a space where people feel welcomed and cared for, her presence is woven into our story. Her laughter, her hugs, and the love she shares with customers and teammates alike make Zeb’s feel like home.
